Classical music is the thread connecting vineyard and cellar at Winemaker's Cut. Winemaker, Michal Mosny, believes playing classical music in the vineyard helps grow healthy, balanced vines and deters harmful bugs and birds. The melodies and harmonies continue in the cellar, where vinification happens naturally using wild and organic yeast fermentations. Winemaker's Cut Fidelia 2020, an ode to one of the main characters of Puccini Opera Edgar, has aromas of soft cotton, white blossom, lemon sorbet, and a hint of candied fuzzy peaches. Though only five grams per liter of residual sugar, the flavours lean slightly sweeter towards off-dry, with a bright acidity that drops mid-palate into a leesy mouthfeel. Cheerful and upbeat wine, perfect for adapting into a spritz summer cocktail. Tasted March 2022.
Process: Wild & organic yeast ferment for 17 days. Secondary fermentation in charmat tank for 30 days.
