Tommasi Ripasso Valpolicella Classico Superiore 2018
There’s always a sense of jovial excitement tasting Ripasso, like, ‘I wonder what the dried Amarone pummace gave us this time?’. In all seriousness, however, this Ripasso process is culturally fascinating, imparting centuries of history into a wine — not to mention a richness of character to an already outstanding (Classico Superiore) wine. An uplifting spice is prominent in the glass, with supporting notes of black fruit and gentle herbs. Its full body is graceful, with notes of boysenberry jam and tobacco. Silky tannins deliver a well-balanced richness through to the end. Tasted July 2022.
Process: Fermentation in stainless steel vats for around 15 days. Re-fermentation on the pomace of the Amarone for 12-13 days. Maturation for at least 18 months in 65 hl Slavonian oak casks plus 6 months of bottle aging.
