Today, it embodies traditional winemaking, with natural fermentation, barrel-aging, unfiltered, and unfined. Substance 'Cs' Cabernet Sauvignon 2019 punches above its weight (about $25 CDN) with chocolatey and peppery aromas. It's a fresh rendition of Cab Sauv, begging for applause from a dinner crowd. Lifted, full of concentrated fruit character, not heady or extracted. Delightful through its elevated and balanced finish. Tasted March 2022.
Process: 50% aged for 11 months in new French oak barriques.
