Spier Signature Collection Merlot 2018

Covert Farms Family Estate Rosé wine
Over the years, I've become a big fan of the Spier portfolio. From their Signature Collection to 21 Gables and beyond - each bottle is unique and seems to fit a purpose. Spier Signature Collection Merlot 2018 showcases pleasing red fruit, as you would expect for a varietal Merlot. There's a hint of pipe tobacco, dark chocolate, and black liquorice wafting from the glass. On the palate, it's dry, with notes of capsicum. A great balance of savoury but supported by fruit structure. Supple tannins, great mouthfeel, lingering finish begging for food - not that it needs it, but to show off. Tasted June 2021.
Process: Aged in French oak barrels for 8 to 10 months.
