Sperling Vineyards Vision Speritz Pet Nat

Revisiting this boisterous wine from Sperling Vineyards in Kelowna, this pet nat is bottled on its lees at 10% ABV with 1.5 atm of frothy bubbles. In the glass, its appearance is hazy, with aromas of white grapefruit, apricot, and lemon pith. On the palate, Ann Sperling showcases her talent with a nice balance of high acidity and flavour - without an ounce (ok, 2 g/l) of sweetness. Boisterous grapefruit and mandarine flavours round out with a bit of crushed gravel. Superb. Tasted October 2022. ------------------------------------------------------------------------------------- Sperling Vineyards Organic Speritz Pet Nat is highly aromatic. Delightfully driven by grapefruit aromas with some pith, but not overly bitter smelling. Pear drop, green garden grapes, and a hint of honeysuckle round out the bouquet. On the palate, it's fruity at first, then drives toward savoury with notes of cheese, fennel and wet stone. It's light-bodied, with medium acidity, great mouthfeel and a balance of sweetness. A nice lingering finish as well. Tasted August 2021.

Process: "Pet Nat" is a naturally fermented bubbly that starts with wild yeast in vat, then is transferred to bottles to finish fermenting and capture all the remaining bubbles, freshness and goodness. No fining, nor filtering is done.
