Louis Bouillot Perle d’Aurore Crémant de Bourgogne is a shimmering sparkling wine with a price point friendly enough for any occasion. The grapes for this sparkler come from three Burgundy terroirs: Pinot Noir from the Côte d’Or, Gamay from the South of Burgundy, and Chardonnay near Mâcon city. With aggressive bubbles, the bouquet consists of creamy strawberry, pomegranate, and red currants. The label notes Brut at 12 g/L of residual sugar. But it tastes slightly higher - I’d denote this as Extra-Dry (up to 17 g/L) in a blind tasting. Great as an aperitif. Good with food. Crushable on a Wednesday night watching reality tv. Tasted May 2021.
Process: This rosé is made by carrying out a short maceration before pressing. Traditional Crémant de Bourgogne production process, with a minimum ageing 12 months on lees in the bottle.
