Clos du Soleil Capella 2021

Covert Farms Family Estate Rosé wine
Clos du Soleil (meaning "enclosed vineyard of the sun") embodies the essence of its name. Clos du Soleil Capella 2021 comprises grapes (73% Sauvignon Blanc and 27% Sémillon) nurtured in the sun-drenched Keremeos and Oliver vineyards, benefiting from the ideal climate and terroir of the picturesque Similkameen Valley region. Each varietal was fermented separately in French oak and then barrel-aged for nine months with lees stirring, leading to vibrant notes of ripe honeydew, peach, and peak-of-summer green grass, followed by undertones of lemony pith. The palate showcases energetic acidity that remains through a complex texture and elegance. Though completely dry, the finish has an unexpectedly lifted mandarine orange syrup character. Tasted June 2023.
Process: 10% of the barrels went through wild malolactic fermentation. All lots were barrel aged for nine months, on the lees, with lees stirring.
