CHIC Barcelona Brut is a new Cava for me and one worth rolling into my regular sparkling wine rotation. My infatuation with Cava derives from its value. All Cava is made in the traditional method, with its second fermentation happening inside the bottle and resting on lees for a minimum of 12 months, just like any non-vintage Brut Champagne. So riddle me this. Why does Champagne require a hundred-dollar bill at the till, while some Cava (like this one) is less than $20? The answer lies in land value, supply and demand, and a plethora of other intricate economic details. That's why the quality and value of Cava are unmatched. CHIC Barcelona wafts lime and green apple aromas with a persistent mousse. The flavours mirror the aromas, adding white nectarine, neutral minerality, and only a hint of yeast. Cleansing acidity hits the tip of the tongue, right through the back of the palate, with a refreshing finish. Tasted July 2022.
