Stainless-steel fermentation and no malolactic keep things taut and unembellished, letting a precise mix of Catarratto, Inzolia, Grecanico, Grillo, and a touch of Chardonnay speak in citrus peel, green apple, white peach, fennel, almond skin, and a subtle saline edge. The palate boasts linear acidity and a clean, slightly stony finish. It sits comfortably in that modern Sicilian lane that echoes the structure of cooler Italian whites while keeping its regional identity intact. Best served with simply prepared seafood, grilled vegetables, or fresh goat cheese; it’s also an easy match for warm-weather drinking over the next two to three years. Tasted May 2026.
