It's an absolute delight to taste this wine again. I've raved about it before, and the 2021 vintage is no exception. Covert Farms Family Estate Sparkling Zinfandel 2021 is made via the ancestral method and is an exhilarating approach to sparkling wine. With lively bubbles and a vibrant pink hue, it offers an enticing bouquet of white nectarine, grapefruit pith, lime juice, tart raspberry, and the slightest hint of pencil eraser. The palate shows a refreshing balance of fruitiness and acidity, culminating in a lively and enjoyable finish.
The Zinfandel grapes come from the Coyote block in Oliver, B.C., planted in 2006, where it's regeneratively farmed. It's naturally fermented in a stainless steel tank and then gravity fed directly into bottles where fermentation finished without intervention. The wine is certified organic, salmon safe, and vegan.
