It's lifted and savoury, with aromas of wild strawberry, red cherry, crushed rock, and dried herbs that lead into a palate with whole-cluster spice and subtle earth notes. The tannins are delicate but persistent, carrying a lightly smoky clove note through the finish. Thoughtful oak handling keeps everything in balance. Drink now with duck, cedar-planked salmon, or mushroom risotto, though a few years in bottle should bring added savoury depth. Tasted June 2025.
Process: 25% whole cluster inclusion. Matured for nine months in French oak barriques (28% new). No fining or filtration.
