Blasted Church Cabernet Sauvignon 2021

Covert Farms Family Estate Rosé wine
Blasted Church Cabernet Sauvignon 2021 is a full-bodied Okanagan red with plenty of ripe dark fruit. It opens with concentrated blackberry and plum, followed by hints of dried herbs, cocoa, and leather that add a savoury edge. On the palate, the fruit is generous and rounded, with firm tannins giving the wine structure without making it feel austere. Made from 94% Cabernet Sauvignon and 6% Petit Verdot, the fruit comes from vineyards around Osoyoos, Oliver, and the Skaha Bench, with 18 months of total barrel aging in mostly seasoned French oak and 30% new oak. The result has the warmth and ripeness you might expect from the Okanagan, balanced by a distinctly Cabernet-like herbal character. Give it some air and pair it with grilled or braised meats, mushroom dishes, or anything rich enough to meet those tannins. Tasted October 2023.
Process: Aged 12 months in French oak (30% new), plus additional 6 months of aging before bottling.
